8 Steps on How to Cook the Perfect Lumpia Like a Pro

Historically speaking, Lumpiang Shanghai has been part of our identity as Filipinos. According to Pardus, n.p., the history of Filipino-style Lumpia dates back from ninth-century Chinese Traders. Today, our Filipino Lumpia which evolved from its rich history has been the typical good-to-go viand or snack depending on how you would love to enjoy it. But it has no doubt that when a Lumpiang Shanghai has been placed on one’s table, surely your eyes would be locked in targeting the all-time favorite Lumpia.

"The moment my taste buds experienced the explosion of flavors and tasted my aunt’s home made Lumpia on our barrio’s fiesta, every time I eat Lumpia, it has been my quest to find the perfect Lumpia Shanghai and luckily I have found it!"

But before sharing this newly found treasure, have you wondered how a tasty on the inside and crispy on the outside, perfect cooked like a pro Lumpia Shanghai has been made? Luckily, the City Improvement Division of Cagayan de Oro have shared the recipe of their tasty Lumpia which you could enjoy at the comfort of your home.

Preparation Time: 15 minutes

Cooking time: 45 minutes

Serving: 20-30 pcs.

Ingredients:

1 kl. Ground Chicken

For the curing solution:

1T Salt, coarse

1 tsp.  Accord powder/ phosphate

¼ cup water

 

For the seasoning and spices:

3 tsp. oyster sauce

3 tsp. garlic sauce

2 pcs. Egg

3 tsp. white sugar

2 tsp. white pepper

1 bulb onion

3-5 cloves

1pc. Turnip (Singkamas)

1 pc. Carrot

1 pack Raisins (optional)

Onion leaves (worth 5 pesos)

10 tbsp. Cornstarch


Wrapping material:

Lumpia wrapper

 

Instructions:

1.   Select good quality of meat material- selecting high quality of ingredients which are fresh from the market could ensure a richer taste of the Lumpia. As they say, invest more for a greater profit.  Also, when choosing a meat to be used for the Lumpiang Shanghai, make sure to buy on trusted establishments that are accredited by Department of Agriculture´s National Meat Inspection Service.

2.  Measure/weigh ingredients- Also known as the mise en place stage or the preparation stage. When weighing or measuring the ingredients make sure to follow the recipe. With every alteration made on its ingredients could affect the taste of the Lumpia.

3.   Add curing solution to meat material. Mix well until tacky. - This step could be optional since some consumers prefers food with less preservatives. Here in CDO, Accord Powder are usually bought in large quantity. According to the instructor who shared this recipe, accord powder only dehydrates the water content of the ingredient and it does not affect its taste at all.

4.   In a mixing bowl, mix sesame oil, oyster sauce, and eggs. Then dissolve the white sugar and white pepper- The mixing stage ensures a tasty finish product as it will blend all the ingredients well. But before mixing the ingredients, make sure to remove all the jewelries which could bring pathogens to the food you are mixing.

5.   Add the meat then blend well.

6.   Add onion, garlic, singkamas, carrots, raisins and onion leaves. Blend well.

7.   Add the cornstarch, blend well.

8. Wrap with Lumpia wrapper- Wrap the meat mixture neatly.  Egg wash the Lumpiang Shanghain to be sealed.

Wrap it with care. Use the whisked egg mixture to seal the lumpia.
Fry to perfection. On a frying pan, fry the lumpia and wait for it to be golden brown. Best paired with toyo-mansi, vinegar, or sweet and sour dip.
